Recipe: Raspberry and Oat Buttermilk Pancakes

Perfect pancakes.

Easy and Delicious, these thick pancakes are the perfect make-at-home brunch

Ingredients (Makes 12 pancakes)

  • ½ cup oats
  • ½ cup milk
  • 1 cup wholewheat flour
  • ½ cup white flour
  • 2 teaspoons baking powder
  • 1 tablespoon caster sugar
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 ½ cups buttermilk
  • 1 teaspoon vanilla extract
  • Raspberries (either fresh or frozen)


  1. Combine the flours, baking powder, sugar, salt and oats
  2. Whisk the milks, vanilla extract and eggs in a separate bowl
  3.  Add the wet mixture to the dry gradually, ensuring each part is combined before adding more
  4. Refrigerate for an hour, or overnight for a super-thick mixture
  5. Melt some butter in a frying pan. When hot, drop a few tablespoons of the mixture into the pan, then put several raspberries onto the pancake
  6. Cook until bubbles start to appear on top of the pancake, then flip and cook on the other side
  7. Repeat until you have an amazing stack of pancakes!
